Ancient city known for its age-old grape molasses delicacy
Ancient city known for its age-old grape molasses delicacy
The ancient city of Uzuncaburç, located in the southern province of Mersin’s Silifke district, is home to temples, churches and monuments. Aside from its rich cultural heritage, the locals have managed to sustain the thousand-year-old grape molasses delicacy, known as “pekmez” in Turkish. (AA Photo)
Local farmers taking care of the grape production meticulously in the surrounding area of the 2,000-year-old ancient city have been keeping this age-old tradition alive.
Fresh from the farms, the well-ripened grapes are boiled in huge cauldrons for hours to obtain the molasses.
Preserving some for their needs, the rest of the sweet grape reduction, packed with health benefits, is sold in the markets.
