Professor Canan Efendigil Karatay has contacted the Hürriyet Daily News to offer her commentary on the report.
I would like to underline one point to avoid misunderstanding: the Karatay Diet does not prohibit carbohydrates altogether.
Professor Canan Karatay says her diet, including a great many healthful recipes, is also suitable for vegetarians...
One cup of black bulgur (coarser grind)
250 grams of mushrooms
Breakfast (8 am – 9 am)
• Two medium boiled eggs (or lightly cooked omelet in butter)
• 8 or 10 unsalted olives (green or black)
The foods fundamentally prohibited by the Karatay Diet are high-carbohydrate foods like bakery items and pastry, junk food and candies, sodas and alcoholic beverages...
According to Dr. Canan Karatay, the reason behind uncontrolled weight gain is insulin resistance, which is a direct result of the constant circulation of leptin and insulin in the bloodstream.
Although Dr. Canan Karatay recommends eating foods with a low glycemic index (GI), she also warns that consuming large portions of low-GI foods can cause “high glycemic load.”
