Turkey’s Kırklareli cheese exported to 16 countries
Cheese produced from the milk of cows and sheep in the Istranca Mountains region in Turkey’s western Thracian province of Kırklareli has been exported to 16 countries including Qatar, Iraq, Lebanon and the United States.
The aromatic flavor of Kırklareli cheese springs from the flora of the Istranca Massif that lies at the crossroads between Bulgaria and Turkey’s northwest.
Local producers have been making efforts to create their own brand in recent years, Soner Ilık, head of Kırklareli Chamber of Commerce and Industry, told state-run Anadolu Agency on Aug. 23.
“Milk and milk products worth $24.2 million were exported from our province in the last year. We have been exporting milk products made in compliance with European standards to 16 countries. We want to make our own milk and milk products brand. We aim at opening up to the world,” Soner Ilık said.
Local producers of Kırklareli cheese have also applied to the Turkish Patent and Trademark Office to get a geographical indication certificate, Soner Ilık added.
The fat rate of the Kırklareli cheese is being standardized following the fermentation process. Then it is cooled and salted and preserved in brine for a period that differs for every kind of cheese.
