Professor Canan Karatay says her diet, including a great many healthful recipes, is also suitable for vegetarians, partly because her menus rely on Turkish and Mediterranean cuisines, which employ a great deal of olive oil vegetable stews.
“When you exclude meat, fish and chicken from the menus that I suggest, my diet automatically becomes suitable for vegetarians,” she says, listing suitable dishes for them.
